Zachary was referring to the champagne chocolate and the bourbon chocolate. Don’t be incredulous when I say this, but those two chocolates followed eight others and a raspberry pâté de fruit! In contemporary parlance, OMG!! Discovering chocolates at Chocolate Springs chocolaterie is exciting because they are as good as you will find anywhere in the world, and I have tasted chocolates around the world. What I like about these chocolates is that they are not overly complex or sweet, yet they are subtle and delicious. They are not too large, and they provide a perfect bouchée. I am so happy when I find someone excelling at their passion. Joshua Needleman, the chocolatier here at Chocolate Springs, is an intense, and meticulous gentleman. To be an excellent chocolatier, you MUST have those qualities because chocolate is unforgiving at this level, as is running a business…….
